Preheat the oven to 325°F - 160°C.
In a bowl, mix together the oats, flax seeds, salt and cocoa powder.
Mix in the maple syrup and canola oil and spread on a baking tray (with parchment paper).
Bake for 20 to 25 minutes, stirring a couple of times. Allow to cool down.
Add the chocolate chips and shredded coconut.
Keep in an airtight container in a dry place, away from sources of heat, for up to a month.
