Taboulé, Couscous Salad

Vegan couscous salad with finely diced cucumber, tomato, red onion and parsley.

  • ½ cup medium couscous 100 g
  • 1 cup tomatoes 200 g
  • 1 cup cucumber 130 g
  • ¼ cup red onion 30 g
  • ½ tbsp parsley or mint chopped
  • ½ tbsp lemon juice 7 ml
  • 1 tbsp olive oil 15 ml
  • ¼ tsp salt


  • Finely dice the tomatoes, red onion and cucumber, and put them in a bowl - with their juice - along with all the other ingredients.

  • Mix well and refrigerate overnight.
