Taboulé, Couscous Salad
Vegan couscous salad with finely diced cucumber, tomato, red onion and parsley.
Servings: 2 people
- ½ cup medium couscous 100 g
- 1 cup tomatoes 200 g
- 1 cup cucumber 130 g
- ¼ cup red onion 30 g
- ½ tbsp parsley or mint chopped
- ½ tbsp lemon juice 7 ml
- 1 tbsp olive oil 15 ml
- ¼ tsp salt
Finely dice the tomatoes, red onion and cucumber, and put them in a bowl - with their juice - along with all the other ingredients.
Mix well and refrigerate overnight.
Enjoy cold or at room temperature.
