Chickpea flour cookies

Cookie dough base

  • ¾ cup chickpea flour 90 g
  • 1 pinch sea salt flakes
  • ½ tsp baking soda 3 g
  • 2 tbsp light brown sugar 20 g
  • 3 tbsp canola oil 40 ml
  • 3 tbsp maple syrup 60 ml

Vanilla and chocolate chips

  • ½ tsp vanilla extract 2 g
  • ¼ cup dark chocolate chips 50 g

Matcha and white chocolate chips

  • 2 tsp matcha powder 6 g
  • ¼ cup white chocolate chips 50 g

Caramelized pecans and chocolate chips

  • ¼ cup pecan halves 25 g
  • ½ tbsp icing sugar to caramelize the pecans
  • cup dark or milk chocolate chips 25g


  • If you're making the caramelized pecans and chocolate cookies, mix the pecans and the icing sugar in a pan. Heat on medium heat until the sugar starts dissolving and from that point on, stir until caramelized. Allow to cool down on parchment paper and crush.

  • Preheat the oven to 350°F.
  • In a bowl, mix the dry ingredients together with a whisk.

  • Add in the liquids, and mix with a spatula until combined.
  • Lastly, put the chocolate chips and nuts.

  • Scoop or divide the dough in 4 cookies, put on a baking sheet with parchment paper and press with the palm of your hand.

  • Bake for 12 minutes, turning the baking sheet halfway.
