Lemon curd

  • 2 eggs 100 g
  • 1 ½ egg yolks 30 g
  • ½ cup sugar 150 g
  • 1 tbsp + 1 tsp cornstarch 10 g
  • ½ cup + 1 tbsp lemon juice 100 ml
  • 1 lemon, zests organic
  • cup unsalted butter 100 g - cut into pieces

Marshmallowy meringues - one douzain

  • 1 ½ tsp cornstarch
  • ½ cup sugar
  • ¼ cup egg whites room temperature
  • tsp cream of tartar
  • 1 pinch salt
  • ½ tsp vanilla extract

Crumble

  • 3 tbsp unsalted butter 45 g - cold
  • ¼ cup brown sugar 50 g
  • cup AP flour 50 g
