Oatmeal and egg white pancakes

I’m not on any type of diet but I like to try different ways of doing things, and as long as it tastes good, I’m cool with it! So today’s recipe is low carb and delicious!
Also, for me, it’s a great way to use my egg whites. If I baked something with egg yolks and don’t feel like doing meringues or macarons with the whites, I can make fast and easy pancakes.
I eat them either savory or sweet, depending on my mood. So don’t be scared to add some herbs or spices in the batter.

Oatmeal and egg white pancakes
Low carb pancakes made with 3 ingredients, add some sipces and herbs according to your taste!This recipe makes 2 pancakes.
Ingredients
- ½ cup old fashioned oats
- ¼ cup cottage cheese
- 4 egg whites
- seasonning to taste salt, pepper, herbs, spices
Blend all the ingredients together with a hand blender or a food processor.

Cook straight away in a frying pan, on medium heat, with some oil or butter.

Eat with the toppings you like, for me it was “pizza Margherita” style…!
