Goat cheese & sweet potato gratin

This sweet potato and goat cheese gratin is a vegetarian and gluten free dish, that only requires a few simple ingredients.
How to make a goat cheese and sweet potato gratin
Peel and slice the sweet potatoes thinly. Put in a pot, cover with water and bring to a simmer over medium heat. Cook for five minutes from that point on, strain.
In the meantime, peel and slice the onion. Saute in a pan with a bit of vegetable oil over medium heat for a few minutes. You want it to reach a nice golden color, that’s what’s going to give some extra taste to the dish. Season with salt and set aside.
Mix the goat cheese and the eggs with a hand blender until smooth, add some dried thyme and season to taste.
Preheat the oven to 350°F – 180°C.
Put the sauteed onions in the bottom of a casserole dish, place the sweet potato slices on top, and pour over the goat cheese and egg mixture slowly up to the top.
Bake for about 45 minutes, until the blade of a knife comes out clean.

This sweet potato gratin can be eaten hot or cold depending on the season, with a side of green salad drizzled with honey dressing for example. You can also make it as a quiche, with regular or puff pastry.
