Vegan Poke Bowl

I wanted to make my own poke bowl for a while, I absolutely love them because they are healthy and comforting at the same time!
This poke bowl is made of a coconut rice, I found the recipe on Nagi’s blog, the rice has a light coconut flavor and she gives you great tips to make it to perfection! You can prepare the rice the day before, store it in the fridge and warm up the quantity that you need just before making your poke bowl.
I also put mango sticks, smoked tempeh, purple cabbage, avocado, peanuts, and a sweet and savory sauce.
Obviously, you can substitute some ingredients for some others, just try to keep a good balance of taste and texture!

Vegan poke bowl
Ingredients
- coconut rice see notes
- 1 mango
- 1 block smoked tempeh 225 g
- ½ small purple cabbage
- 2 avocados
- 2 tsp lemon juice
- ¼ cup peanuts
- sea salt
Sweet and sour sauce
- ¼ cup soy sauce
- ¼ cup maple syrup
- ¼ cup peanut butter
Notes
Start by making the rice following Nagi’s instructions. Once it’s on the stove, prepare the other ingredients.
Cut the mango in long sticks, the tempeh in cubes, chop the cabbage and the peanuts.
Make the sauce. Heat up the peanut butter in the microwave to make it smoother. Then add the soy sauce and the maple syrup and mix with a spoon.
Mash the avocados with a fork, add the lemon juice and a pinch of salt.

Heat up a non-stick frying pan on medium heat, add the tempeh and cook for a few minutes.
Once the rice is cooked, put it in the bottom of a bowl, add the cabbage on one side and the warm tempeh on the other. Drizzle with sauce.

Put the mango sticks on top and make a guacamole ball with an ice-cream scoop. Finish by sprinkling with chopped peanuts.
