Pea and Mint Soup

Pea and Mint Soup

This pea and mint soup is vegan and gluten free. It can be eaten hot or cold depending on the season.

About the ingredients

Green peas are high in protein and fiber, and contain several minerals, vitamins and antioxidants. You can use either fresh or frozen peas without changing anything in the recipe.

Mint is a good source of vitamin A and antioxidants. Taste is not overpowering and works very well with peas.

The texture of the soup is pretty thick. Add some more vegetable broth until you reach the consistency you like!

What to serve with pea and mint soup

I love to eat bread with soup, like this rustic rye hazelnut bread or this corn bread loaf. These recipes are not gluten free.
