Pea and Mint Soup

This pea and mint soup is vegan and gluten free. It can be eaten hot or cold depending on the season.
About the ingredients
Green peas are high in protein and fiber, and contain several minerals, vitamins and antioxidants. You can use either fresh or frozen peas without changing anything in the recipe.
Mint is a good source of vitamin A and antioxidants. Taste is not overpowering and works very well with peas.
The texture of the soup is pretty thick. Add some more vegetable broth until you reach the consistency you like!

Pea and Mint Soup
Vegan and gluten free pea and mint soup.
Equipment
- Hand or stand blender
Ingredients
- 2 cups peas – fresh or frozen (250 g)
- ¾ cup diced potatoes (125 g)
- 1 cup mint leaves (10 g)
- 1 tsp olive oil (5 ml)
- ½ cup sliced onion (80 g)
- 2 cups vegetable stock (500 ml)
- salt and pepper – to taste
Instructions
- Heat up the olive oil in a pot on medium heat, and saute the sliced onion.
- Add the diced potatoes and saute for a few more minutes.
- Mix in the peas and vegetable broth, cover with a lid, and simmer for about 15 to 20 minutes.
- Once the potato is cooked, add the mint leaves and blend until smooth.
- Season to taste.
