Basic Tomato Sauce

Tomato sauce is a basic for me as I use it in so many recipes : pasta, pizza, nachos, soups, curry… I like to make it myself because I can adjust the flavors to my taste, and it’s so quick and easy to make.
I usually use canned tomatoes, because it’s hard to find tasty, juicy tomatoes. If you want to use fresh tomatoes, just make sure to peel them. Simply cross the top of the tomato with a serrated knife and plunge it in boiling water for one minute. Then, plunge in iced water and peel it.
You can chop the onion, celery and garlic roughly since you’re going to puree the sauce in the end.

Feel free to be creative, and depending on your taste and what you want to use your tomato sauce for, add some spices, herbs, vegetables, olives, roast the garlic…

Basic Tomato Sauce
Ingredients
- 1 yellow onion roughly chopped
- 1 tbsp olive oil
- 1 tbsp white cooking wine
- 3 celery ribs roughly chopped
- 2 cloves garlic roughly chopped
- 19 oz whole canned tomatoes 540 ml
- 1 tsp sugar
- ½ tsp salt
- pepper to taste
- 1 tbsp fresh basil
Instructions
- In a pot, heat up the olive oil on low-medium heat and fry the onion, stirring often.
- Once the onion is translucent, deglaze with the wine and wait until evaporated to put all the ingredients in the pot.
- Bring to a boil, cover, and simmer on low heat for 20 minutes.
- Puree with a hand blender.
