Homemade Almond Milk

Benefits of making your own almond milk

Homemade nut milk is easy to make and healthier than store-bought plant-based milk, as it contains no additives or preservatives. Therefore, make small quantities at a time, you’ll only be able to keep it for up to five days in the fridge.

You can make hazelnut or cashew milk using the same quantities. Of course, each nut has different properties, almonds are high in proteins, iron, calcium, potassium, phosphorus, and in vitamins A, B and E.

How to make nut milk?

You need to soak the almonds in water overnight to soften. The next day, drain, rinse, and mix them with water and salt in your stand blender, for a couple of minutes. Time may vary depending on how powerful your device is.

This is a recipe for basic unsweetened milk. You can add vanilla extract, sugar, maple syrup, or cocoa powder for example.

To filter the milk, use a nut milk bag or a cheese cloth and squeeze it well to collect as much juice as you can.

Keep the milk for up to five days in an airtight container in the fridge, and shake before use.

What to make with almond pulp?

No waste, almond pulp can be used in so many recipes!

Keep in an air-tight container in the fridge and use in cookies, cakes, crumbles, or pesto for example.

When baking, replace half of the quantity required for almond flour with almond pulp. Don’t use in macarons, they are too delicate.

Ingredients
  

  • 4 cups water – 1 liter
  • cups whole almonds – 200 g
  • 1 pinch salt

Instructions
 

  • Soak the almonds in water overnight.
  • Drain and rinse the almonds and put them in the jug of your blender, along with the water, and the salt.
  • Blend on high speed for a minute or two.
  • Strain over a bowl with a nut milk bag or a cheese cloth. Squeeze thoroughly.
  • Pour the milk in an airtight container and store in the fridge for up to 5 days. Shake before use.

  • Almond pulp can be used in pretty much any recipe requiring almond meal. I wouldn’t use it for macarons though, as they are so delicate.
