Soft & Moist Pear Sauce Cake

Here I come again with a no eggs recipe! It’s a simple but very tasty pear cake, with a moist soft texture…
You’ll need some pear sauce, that you can do yourself following my recipe – it’s fast and easy – or, you can simply buy some canned pears in syrup and blend them with a bit of the juice. Also, you can definitely replace the pear sauce by apple sauce, it works just as fine!

Ingredients
Cake Batter
- 1/2 cup + 1 tbsp pear sauce 150 g – you can replace pear sauce by apple sauce
- 3 ⅕ tbsp salted butter 50 g – melted
- ½ cup flour 60 g
- 3 ½ tbsp sugar 45 g
- ½ tsp baking powder
- ¼ tsp ground cinnamon
Pear sauce
- 2 pears 250 g – peeled and cut
- 2 tbsp water 30 ml
- 3 tbsp sugar 40 g
- 1 tsp lemon juice
Make the pear sauce by combining the pears with the lemon juice.
Bring to a boil the water and sugar, once it’s boiling and the sugar is dissolved, add the pears, cover and cook for about 10 minutes on low heat. When the pears are soft, puree with a hand blender.
Preheat the oven to 325F.
In a bowl, whisk together the flour, sugar, baking powder and cinnamon. Then, mix in the compote and lastly, the melted butter.
Pour into a loaf pan lined with parchment paper and bake for about 40 minutes.

Allow to cool down for a few minutes before unmolding.
Eat warm or cold, sprinkled with cinnamon powdered sugar!
