Coconut and Chocolate Granola | GF

This coconut and chocolate granola is so good and quick to make, you won’t have to buy the expensive gluten free and vegan alternatives anymore!
About the ingredients
If you are on a gluten free diet, make sure that the oats you’re buying are made in a gluten free facility.
Flax seeds are high in fiber and omega-3 fatty acid. I use ground flax seeds because it’s easier to digest and therefore, to get all the benefits from it. Like any granola, you can switch some ingredients with others, like hazelnut instead of shredded coconut or dried raspberries instead of dark chocolate chips.
Enjoy your granola with almond yogurt and fruits or sprinkled on top of a rice pudding.


Coconut and Chocolate Granola | GF
Ingredients
- 1 ½ cup gluten free rolled oats (150 g)
- 3 tbsp flax seeds (20 g)
- ½ tsp sea salt flakes
- 1 tbsp unsweetened cocoa powder (7 g)
- 3 tbsp maple syrup (65 ml)
- 1 tbsp canola oil (15 ml)
- 4 tbsp unsweetened shredded coconut (30 g)
- ¼ cup dark chocolate chips (50 g)
Instructions
- Preheat the oven to 325°F – 160°C.
- In a bowl, mix together the oats, flax seeds, salt and cocoa powder.
- Mix in the maple syrup and canola oil and spread on a baking tray (with parchment paper).
- Bake for 20 to 25 minutes, stirring a couple of times. Allow to cool down.
- Add the chocolate chips and shredded coconut.
- Keep in an airtight container in a dry place, away from sources of heat, for up to a month.
